How (do I even need to) do I keep interest when date is not for another week?

I may be going against the consensus here but I generally keep texting at a minimal as it can (inadvertently) come across as needy and honestly doesn't build that much attraction. Plus it's a pain and can be stressful.

If the first date went well you should easily be able to pick right back up where you left off.

I typically tell girls right away that I'm "bad at texting". This covers my bases in case I fuck up and misinterpret her texts. It also makes me look aloof and allows me not to go through the hassle of texting them. That being said, definitely text her 1-2 days before the date to confirm and if you see something that relates to a conversation you had during the date then texting her about that could be a good strategy.

Set a definitive date, prepare for a date (fun filled romantic opportunity for sex to happen) and then let her attraction grow while she's waiting and wondering about you. Don't listen to this jackasses that tell you that you should text between dates, because you're blow it with this girl.

Just keep the texting to a serious minimum. Long text conversations are a no-no, that's where a lot of guys including myself have fucked up. But an occasional witty or funny text once or twice a week that elicits a laugh isn't going to make a difference.

Just text her casually. Ask her what she's up to this weekend, and don't be shy to share what you're up to either; this is a chance for you to talk about your interests and display some value. Get a conversation going. You don't need to respond immediately either, wait a little bit between each message and let it span over the day. Tell her you had a lot of fun last time you guys went out you're looking forward to seeing her again.

If you don't continue talking to her you're going to come off as timid and shy and she's going to lose her initial interest that you'd already worked so hard at building. Fuck yes you should be stoking the flame. Flirt with her via text and try to lead the conversation into sexual topics.

"Hypothetically speaking, if we were living together, what percentage of the house could I turn into a sex dungeon?"

"I heard that 90% of women masturbate in the shower and the other 10% sing. What song do you sing?" If she doesn't name a song then you've got your open door.

Obviously don't lead the conversation with this, lol. It should be a natural transition. This is huge for tinder game as well.

Edit I love how this goes from +15 to -4 in 3 hours after the guy below me commented. I would recommend following the three day rule! Don't bother making an effort until three days before your date. Send her a text like "all prepared for our date? How was your day?" Then use that time up until then to just get to know the girl. Use these days to practise. Find topics you know she wants to talk about and make a mental note to continue these conversations on the date. We all know the second date is the qualifying date. You know she like you. She agreed to a second date. This is the time to really demonstrate value. Find out the days counting up to the date what kind of person she wants. Then on the date, be a perfect blend of that person and you.

I have often kept interest with a little joke . Something random and weird which illicit a response like "stop doing that". When she responds with "stop what?" You can respond with "thinking about me :)" it sounds pretty dumb but this does 2 things one it hopefully made her laugh and 2 it makes her start thinking about you. Now if she responds Don't respond again until the next day. As once you are on her mind and if she can't speak with u. She stays interested. But hey I also am a chronic texter so maybe this stuff works better for me.
