Turn the shit test back on her. Make her feel bad for screening you based on race. Suddenly, the situation becomes you screening her for having shitty outlooks on life and relationships.

Something like this, but less harshly worded:

Her: "This won't work. I'm white, you're asian."

You: "Yeah, you're right, it wouldn't work. On top of that, you're racist, I'm not."

It's not necessarily racist. I wouldn't describe myself as racist in the slightest, but I definitely find myself most often attracted to other white people. I have absolutely no problem talking to or being friends with coloured individuals. I'm just less likely to find them sexually attractive.

That's not racist. It's just how I am attracted to other people.

Granted I would never say "sorry, you're black" to anyone, so this chick could just be a scumbag, but I don't think it's fair to go from "individual x is more attracted to ethnicity z, therefore individual x is racist".
