Universal rules are useful because they have the potential to help the most amount of people in the simplest way.

Debatable. The vast majority of the claims regarding "brain" chemistry (especially the "balance/imbalance" malarkey) are speculative theory (at best), with little to no actual evidence to support the "accepted" construct (which is mainly a result of marketing BS from pharma).
The body actually "adapts" to things like regular intake of caffeine. The problems you cite are typically only seen when someone is doing something that their body is not used to -- i.e. changing their regimen, either indulging in some strong late night coffee when they usually wouldn't; significantly upping their total daily intake; or alternately attempting to dramatically cut back (and thus experiencing withdrawal symptoms).
Oh and the stuff about "disease" related to caffeine? Utter and complete bullshit.

No it isn't. You don't have a CLUE about his actual health. He only gave you three pieces of very crude data: his age, the fact that he works long hours, and as a (natural) result states that he is "too tired to work out."

26 years old
I workout 3 times/a 1h a week, plus one HIIT 20 min once a week.
I drink one small coup of coffee a day, sometimes I skip 2-3 days. Sometimes if lazy i eat junkfood (only after workout), but that happens maybe once to twice a week, otherwise I drink alot of water and try to eat as healthy as possible such as Quiona.
I do 18-24h intermittent fasting since 3 years , body of course adapted great, feel mostly not hungry until evening. however I suffer a bit from chronical depression right now, so sometimes i do binge eating.
My question is if i should cut sugar/coffee completly, even if its just a smal portion a day, or if I do underestimate it and should cut it completly out. Also, does coffee with sugar, thai nudles/bread influence my bodyfat in a drastic way and better switch to vegetables only?

probably as a symptom, not sure about chemical imbalance. I had a rough breakup 4 years ago, since then my pleasure response towards entertainment, food and all the things that stimulated, had been gone down drasticly. Its building up slowly tho.
