I disagree about your recommendation to wait until next time you see each other to tell her you also speak French.
After you learn she speaks French, I would personally recommend replying to her in French immediately, asking her some kind of question or saying something cute/cheesy.
After all, you may never get that second chance to see her.

I think the best balance is to reveal the history and then downplay it.
"I studied French for 6 months, but I don't feel I speak enough. I need a refresher course."
This gives them the info, shows humility, and shows them you have goals and a mission.
IMO there's no need to go full on silent about achievements, but I get that people shouldn't boast.

Raise the bar slowly, instead of tooting your horn at first instance, play a smooth melody instead, it keeps conversation fresh.
I used to struggle because I would show all my cards too early, then run out of things I thought were interesting about myself. Same goes for friendships, as well as romantic relationships...

When is the right time? You are literally making an attempt to withhold information.
I don't disagree that this withholding is good and interesting, but people only get to know that I have some sort of value if they hear it from somebody or I am forced to demonstrate it e.g. show off my public speaking skills in debate club. I was asked to explain preselection at psychology club and the chicks were fascinated and one in particular was very aggressive afterwards—not sure why, but she kept asking a ton of questions after the meeting and thought I was a genius no matter what I answered.
When people have no idea what I do, they think of me as a regular boring dumbass. I'm in a volunteer fundraising organization and my team does weekly "good thing about your week, bad thing, and fundraising progress." All I do is make up bullshit about my week "yeah I had to retire from the FBI today but my pension couldn't come in" but everyone thinks I'm a dumbass and I'm not as 'high up' you could say.

Yeah I wouldn't follow the rule religiously, I think it's just a small reality check to make sure you're not trying too hard. Definitely be loud and proud of your achievements, as our actions define us.
What works for some doesn't necessarily work for all. If this theory feels unnatural, don't force it...

Perhaps they take this part of the day seriously. Perhaps it means a lot to them. Perhaps it's a way for them to connect and feel connected with.

“Humility” implies it could be something someone would find impressive. I know a foreign language was just an example but probably a poor one in the dating context. Not bragging about owning a Lamborghini is a good example of humility. Hiding knowledge of a foreign language seems pretty tiny.

In the US, foreign language fluency is more impressive than owning a Lamborghini IMO, especially if it's not something you grew up with. It's something very few people do here.

Mhh don't know man. More often than not impressing someone (particularly if it's the first time you meet them) is that one thing that keeps the other person interested in interacting with you. There may be no other chance to meet that person again, and by telling your achievements immediatly that person will have a memory of you. Not only that, it can also happen that if you don't put something special about you on the table immediately, the other person may consider you just like all the others, without anything special.
I have a perfect real life example of this: In the gym i once met a girl and discovered she was learning Russian. I immediately stated that i know Russian too, and that was huge because nearly nobody knows Russian in my country. She immediatly categorised me as a non ordinary guy, i leveraged that first impression and as a result she was all over me for a lot of time.

This is really not good advice. By all means don't brag but if you find an opportunity for common ground you should take it. Try to have an interesting non obvious conversation subject, but dont avoid common ground so you can save it up to later. You will just end up not talking to her again. Maybe this depends on your personality but Im much more likely to not talk to a cute girl than to say something that sounds like bragging
