That “_You are gonna have to come up with a better excuse than that_” is a usually a red flag for women.
Calling women out on their excuses to not go out with you, doesn’t make them wanna go out with you, it usually has the opposite effect, it only makes them more reluctant to go out with you.
Women do not like being pressured like that.

In my experience from doing the same thing, the best way is to make it playful and less pushy. I would have rolled with the "hey no problem, I guess we had our first date at the gym already ; )" she'd probably respond with a "what do you mean?" And then I'd hit back with "we worked out together".
Make another statement that's fun, and ask when she's hitting the gym next. Work in with her, build up that way.

A few mistakes here, including adopting an unflattering frame and assuming the negative by calling her reply an "excuse." You just come across as childish and reactive, reinforcing this huge age gap. It's the holidays, you're just a random dude she has minimal investment in, and you lobbed a specific day with zero wiggle room without getting logistics first. This is just asking for a no. I almost always operate with an intermediate step first. "What's your week looking like?"/"I'm freer 2nd half of the week. How's Friday or Sunday?" and so on.
Logistics are also something that ought to start being ironed out in person in that initial interaction. What are her plans for New Years? Is she going to be around for the holidays, or traveling out of town? What's her normal schedule like? These are questions that can be asked irl, that way when you're circling back via text, you're not operating completely blind.
Anyway just be chill dude. I'd just thumbs up the message and then circle back towards next wknd. But you have to come correct now.
