How do I change the topic when people ask what I do for a living?

Girls probably latch on to that topic because they think it's something that would keep the conversation going. It's your responsibility to steer the conversation. So say something like "I'm a PhD fellow and I do boring research. Enough about me though, what do you do?" Or something like that. Just make it clear that you don't want to talk about it

You don't have to go into detail, just give a short description that makes it sound interesting or exciting in some way. You can always turn it around and make it sound cool. Be enthusiastic.

For example, if you study neuroscience: "I do research on the human mind."

If you do astrophysics, hell that already sounds cool. Just say you're a researcher in astrophysics.

If they ask more about it and want you to elaborate, pick an aspect of it that can steer the conversation towards something more relevant to you both.

Example:

"So what does astrophysics involve?"

"Well it means I know the stars and planets better than the back of my hand. I'm the guy you'd want around if you wanna go stargazing"

I know it sounds stupid, but it's jokey and gives you added value. They'll see something intriguing and interesting about you and might find you funny too. This particular example also hints at you two spending more time together and escalates the conversation a bit.

You always have time to go into it in detail when you get to know them better.

This sounds like a conversation we would have on a date/ time to get to know each other better/ whatever you use instead of date if you are afraid to use the term date.

Dude, just say it's a job kinda like one of the guys on "The Big Bang Theory"! That show is hugely popular and is making Science seem exciting to people.

It has also done a good job of explaining exactly how difficult it is to explain such a job to someone outside the field. Now you don't have to say the topic is boring - but you've still basically said as much.

Follow up asking her to rate her scientific knowledge from Sheldon to Penny and the conversation is already headed for another topic.

I don't think you are seeing this correctly.

You are a PHD FELLOW. Emphasize that. Girls dig smart guys. Seriously. You don't have to explain it to them and bore them to death. In fact, it sounds like that is where you are failing. It's not your job that is at fault here. It is how YOU are explaining the details to them.

Here is my advice:

Just say "I'm a PhD fellow". And when they inevitably ask for more details, just say something cocky/clever/funny without delving into details about what you do. You can save this for much later.

Chick: "What do you do?"

You: "I'm a PhD Fellow"

Chick who now thinks you are insane smart: "Really!? For what?"

You: I do research on [insert whatever stupid thing you want]. Example: "Yep! Getting my PhD in Alcohol studies." OR "Yep. I study the behavior of drunk people"

Blah blah, you get the point. Make it funny/cocky/clever and go from there. Whatever you do, DO NOT bore them with details that are obviously losing their interest.

Say super confidently you're a bum whose career is living in his mom's basement. You won't be insecure about this subject because you know where you actually stand. When girls persist on questioning your actual career see how it goes. Some girls will be impressed by your confidence. Play around with it.

Lie. Half the time I meet people in a bar that I know I'll never see again I tell them that I train seals at an aquarium. People eat that shit up. It makes their night. I've seen people months later that recognized me as the "seal guy".

why do you let it drag on? i usually give a quick description of my job, explain why i like it, and segway into something else ("but i can't spend too long in front of a computer, which is why lately i've been _________")

if the person keeps asking questions purely from inertia & i feel it's causing the conversation to go stale, a nice way to change the subject is: "i'll answer that, but first tell me more about yourself. [insert question]". it will rarely come up again, usually people go into interview mode due to feeling anxious.

Just turn the explanation into an interesting conversation. Open with something like "I'm a scientist." Or make some jokes about it. And then just have her ask questions for as long as she's interested.

Don't say it's boring. Say, "Thank you for asking, but do you really care?" She'll be taken aback, but probably say yes (though she'll still be lying). Then you say, "Are you sure? It’s just such a ritualized question. We can talk about that later. Let’s talk about something we both feel more excited to talk about at this point so early in the conversation."

You can try a funny/smartass answer once, but in my experience those planned jokes fall flat, and the girl will just ask again. It doesn't mean the girl is actually interested in what you do, it means the ritualized question is more interesting than your lame joke.

Just be like "I do research, but its really boring, you don't want to hear about it." If they keep goading you, just be like "it's really long, you don't want to hear it." Part of being a confident guy is having boundaries and not letting people violate those boundaries.
