Where's the evidence that men are more risk averse?

The drop in male desire to get married isn't necessarily due to men being more risk averse. The standard equation when evaluating these thing is risk/reward, and choosing not to take the risk may very well be because we have a low expectation of the reward part of the ratio.

I'd be prepared to take a 50% risk of marriage failure if the other result was a 50% chance of marital bliss, but we know that's not the alternative ending.

This just isn't happening. Whenever a local police or fire department has a recruitment hundreds of men apply (thousands for big city departments). Competition to get into military academies (i.e. West Point, Annapolis, and Colorado Springs) is as intense as ever. Bus loads of new recruits are still showing up for basic training every week.

When/if they get these relatively stable positions the first thing most of these guys do is get married and have kids.

I think the decline of religion is what's caused that. More and more people are realising that marriage is a waste of money. That said, I still intend on marrying my other half.

I think men are still going to want to be firefighters, cops even if they do not want to get married. Cops and firefighters tend to be ego driven and seeking particular kind of validatoon and praise. Also cop careers appeal to assholes who like to break shit and get paid for it. T hose are among the few jobs where you still get a fixed pension and not bad benefits with fewer educational requirements. So no.

Men work on a risk based model, the more risk the less commitment.

This is why a women can get a man to sleep with her easily but trying to get him to propose is extremely difficult and usually requires years of her being on her best behaviour(even then no guaranteed).

If you reformed the laws to be more equal for men (50/50 parenting as the default, no fault divorce repealed, fair child support laws) you would see a sharp rise in marriages. I dont believe men dont want to get married they are choosing to not marry because it fails the risk/reward test.
