Best way to impress the SO is to bake him fresh bread every morning:

Get a large bowl

Add 1/2 cup boiling water and 1 cup warm water

Stir in 3/4 Tablespoon regular white sugar

Stir in 3/4 Tablespoon regular table salt

Sprinkle 3/4 Tablespoon dry active yeast (not fast acting)

Dont touch bowl for 2 minutes

Stir yeast until dissolved

Add 3 level cups (you can level by scooping and then scraping top with butter knife) regular all purpose flour

Stir until you have a ball of dough and can't really stir anymore

Pour 1 Tablespoon canola oil on top (kind of coating the ball, doesn't really matter, will rise and end up moving the oil around on its own)

Cover bowl with Saran Wrap

Don't touch bowl for two hours

Line a baking sheet (like for cookies) with parchment paper

Put baking sheet next to bowl

Take off Sara Wrap

Admire your dough that has risen so nicely

Pick up half of you big dough ball and fold it in half

Fold your dough ball in half again

Your dough ball is now smaller, pick it up in both hands and make sure the "seams" from your folding are on the bottom on the ball, if they're not, shape the ball until they are

Put the ball seam side down on the baking sheet

Use a knife to cut three lines in the top of the ball (think like a scratch this is just an aesthetic thing, they will grow and make your bread look more "artisan")

Do not touch baking sheet for 40 minutes

Preheat oven to 500

Set timer for five minutes

Put cookie sheet with dough ball on it in center rack

Start timer

When timer has finished decrease oven temperature to 450

Do not open oven

Set timer for 17 minutes

When timer has finished open oven and see if your bread has any "white looking" as opposed to "golden looking" spots (sometimes the bottom will be too white, look by flipping over the bread, if it is, keep it bottom side up when you put back in oven.)

If it is "too white" put back in oven for 2 minutes

Bread is cooked but not ready to eat

Put bread on cooling rack

Do not cut the bread until it is completely cooled off, if you do the steam will escape and the texture will doughy.

Hurray, you can make bread! So cheap, so easy, so appreciated.

The best chocolate chip cookie recipe, IMO, is the recipe on the back of the chocolate chips. They tend to the chewy side.

Get a Better Homes and Gardens cookbook. Everything is really fun and there's a lot of variety and general info in them.

I always see them at St Vinny's and Goodwill stores for really cheap.

I don't have a good chocolate chip cookie recipe at the moment, but this chocolate cake hasn't failed me yet. I put the mixture into a 7x11'' rectangular glass dish, but you could probably try different shapes and decorate it!

(It is vegan, but you can easily use milk/butter.)

I recently discovered America's Test Kitchen (on Amazon Prime streaming). They also go by Cook's Illustrated and Cook's Country (from my understanding). It might be worth checking out one of their recipes. They will take a recipe and test multiple variations of that recipe. For example, they probably made over 100 batches of cookies and they try to figure out which recipe is consistently the most foolproof one. I just checked out one of their cookbooks from my local library and am hoping I will get better results in the kitchen as well.

These are my go-to for when I need to make something sweet - they're simple and they don't make the kitchen get too hot.

Bourbon balls!

2 1/2 cups crushed nilla wafers
1/2 cup confectioner's sugar
1 cup chopped pecans
2 cups dark chocolate chips
3 tablespoons light corn syrup
1/3 cup bourbon
Granulated sugar for rolling

Mix the dry ingredients in a bowl (confectioner's sugar, pecans, nilla wafers). Melt the chocolate chips then stir in the corn syrup and whiskey. Mix well. Combine with dry mix and roll into balls. Roll balls into granulated sugar, set on pans or cooling rack and let them set for about a half hour.

Don't beat yourself too badly, there are lots of things that can affect the way baked goods come out even if you followed instructions perfectly. For example, not all ovens are calibrated properly (for example, the dial on your oven may be set for 350, but it could be 425 degrees). Some ovens have hot spots. Altitude and humidity where you live can affect things as well. Get to know your oven and the environment you live in and you'll be able to make adjustments accordingly.

I read some of the other comments and you say you like chewy cookies.. Me too! Chilling cookie dough overnight has always without fail yielded a perfectly chewy cookie.

If your oven consistently runs hot, you should make sure to get an oven thermometer (it hangs on the front of the rack) so you can make sure that you are baking at the correct temp. This helps calibrate both for gauges that are off, or where the numbers have been worn off from age.

If you set the oven to 450 and it turns out 500, you're going to have a bad time. Especially for things that only take ~10-15 minutes to bake, like cookies, even a 25 degree difference (F) can make a world of difference.

Cupcakes are easy to overbake, and then they will be dry and gross. Baking takes practice, maybe try to make something every week or even twice a week.

Cornbread is incredibly easy--borderline idiot-proof, to be honest--and goes well with barbecues in the summer and hot soup in the winter. It was the first thing I ever baked. It's also easy to change up. I like adding lemon zest and blueberries for spring or cheddar and green chili peppers as a side for chili. The basic recipe I use:

1¼ cup all-purpose flour
¾ cup yellow cornmeal
¼ cup sugar
2 teaspoons baking powder
½ teaspoon salt
1¼ cup milk
¼ cup vegetable oil
1 egg, beaten

Get a big bowl and a medium bowl. In the big one, mix the dry ingredients. In the medium, mix the wet ingredients. Add the wet stuff to the dry stuff and stir to combine. At this point, fold in any extras. Bake at 400 for 25ish minutes or until a toothpick comes out clean and the top is golden and shiny.

Other ridiculously easy recipes: Pioneer Woman's lemon blueberry galettes using store-bought pie dough and her blueberry crumb cake, King Arthur Flour's super easy foccacia (aka the quickest yeast bread in the world), and this easy naan to make your Indian dinners magical. I highly recommend Pioneer Woman, by the way. I don't use her site much anymore, but she has a lot of very easy, very man friendly recipes, especially for baked goods. She basically taught me how to cook.

ETA: buy an oven thermometer. I moved from a brand new apartment to an older, 1950s house, and nothing was cooking right. Turns out my oven tells me it's preheated about 10 minutes before it is, and it's regularly off by as much as 50 degrees, not even kidding. Which is totally fine for say, roasting vegetables, but it's devastating for baked goods.

Best Chocolate Cupcake Recipe For next time. It takes some time, and the filling is key, and best with some amaretto... but it keeps them super moist, and just fantastic. Good luck!

The key to being a good baker is being able to tell what you added too much of/too little of/didn't combine well etc.
