It's not as simple as that.

In terms of mass adoption and convenience, nowhere else in the world has reached the level China has. Admittedly, this is completely due to an authoritarian government who can decide which services get mass adoption and which don't. Alipay and WeChat Wallet are accepted not only in every convenience store and supermarket, but pretty much every other kind of store too. You can pay for meals, taxis, train tickets, movie tickets, event tickets, instantly, with these two services. You can pay all your bills, top up your phone credit, or pay your traffic tickets. You can buy insurance, you can get your dog washed, you can send money to your friends, you can invest in wealth management funds. All this and a hell of a lot more, most of it done directly inside the WeChat app.

It just became a normal part of Chinese life, paying for everything with your phone. You can't move 3 steps in a Chinese city without seeing a QR code. I moved to China when none of this was a thing. By the time I left only ~7 years later, if somebody didn't have Alipay or WeChat wallet, or if a place didn't accept them as the primary form of payment, they'd have been considered way behind the times.

Sure, other places in the world have e-payment options, like the ones you mentioned. But everyone is still vying for theirs to be adopted en masse, so you have a much more fragmented market. Every country has at least 2 or 3 major competing companies, as well as most of the banks dragging themselves into the 21st century with their own payment portals, as well as the international (but still not strongly established) payment options like Google Pay, Apple Pay, Samsung Pay, Venmo, CashApp, etc. It's a complete lottery as to whether a particular place or service is going to accept the option(s) that you're signed up with.

And it's going to stay fragmented for a long time, until either one of the contenders destroys the opposition and establishes a monopoly, or until one is officially adopted by the government. Compared to China, every other country is still in the concept phase.

Everywhere else, the free market decides who succeeds. China never had that problem - the government simply decreed that Alipay and WeChat Wallet are the only acceptable options, and everything else is irrelevant. Obviously, the CCP being what they are, they also inserted their presence deeply into both of those services, to the point where every user's data is obsessively tracked and they can build a profile of a person's entire life in an instant, which ties in nicely to the dystopian mass surveillance and social credit systems they continue to roll out.

As a result, China is light years ahead of the rest of the world for this stuff. It has definitely become more commonplace in other countries, but spend a couple of days in China and you'll quickly understand just how far ahead they are in terms of mobile payment. You just know that everywhere is going to accept Alipay and WeChat Wallet. This eradicates all doubt. Once you're used to that, it's hard to readjust.

Where I now live (a very developed country by comparison), there are mobile payment options, albeit very fragmented like everywhere else. I'm signed up to 4 or 5 different ones and I still end up using them very rarely. I rarely have to use cash or visit an ATM, but I still can't leave the house without a card or some money. There's no way I can rely only on my phone, which in China is not only doable but it's the norm.

The only surprise somebody who has spent time in China will have when visiting other countries is at just how annoyingly far behind China they are in this particular aspect of daily life. It's mostly out of necessity to serve a country of 1.4 billion people, and none of this means that China is any kind of utopia, because it isn't. You're trading freedom and autonomy for convenience. But in terms of convenient e-payment en masse (and general logistics of any mass-scaled enterprise like package couriers), they really are light years ahead.
