Hi ladies! My s/o is hosting an event this coming Monday, and has asked me if I would cook dinner for everyone. Of course I accepted immediately and am so excited to do this for him! However, I am a bit intimidated, because I've never cooked for so many people, and really want it to go smoothly. I think the most I've hosted for dinner is 12 or so, and that was co-hosting with another woman.

My menu (open to suggestion) is brisket in a slow cooker (I have access to 3 crock pots), a french onion soup rice casserole, roasted cauliflower and potatoes, and homemade rolls. I'm also planning on making a red wine reduction sauce from the crock pot drippings. This will be served buffet style, and we'll have red wine.

How many pounds of meat should I plan on? I want to have plenty, there will be a lot of young men with likely large appetites. How many cups of dry rice? How many potatoes? I'm going to pick up some of the disposable large tin trays they sell at grocery stores for serving, since I don't have any big serving trays.

I would love to do an appetizer and desert but I don't want to take on too much and don't know what to make for so many people. My s/o loves my cheesecake but I think I'd have to make three 10 inch cakes? I can probably do a salad for appetizer with little extra trouble.

Any other advice or ideas you all can give will be greatly greatly appreciated, in terms of scheduling my day, what I should do ahead of time, or things I should consider. It's a formal dinner, people will be dressed up, so paper plates isn't an option so I know I'll have my work cut out for me at the end of the night as well.
