Showing off is generally bad and talking about yourself working out seems a really bad idea to me
What about this is bad? The only reason we're told not to be proud of ourselves is because we've been taught you have to be "modest" by the same people who taught us to worship women. If you're working out and look good, you should be taking compliments. That's why people work out in the first place!
What woman will love you if you don't love yourself?
Just take the compliment and talk about working out. She's obviously impressed by it, so start a conversation from there. A quick "Thanks! I work out X days a week, so I'm glad it's paying off!" is all you need, then just talk to her and ask her out.
EDIT: Since there's been confusion I'll clear this up. I don't mean bragging about how many squats you can do at the slightest provocation. The compliment is literally "You look like you work out a lot", so talking about working out is natural. Don't bring it up if no one asks, that's just qualifying yourself.

No working out in the first place is about discipline, developing the mind and the will to power! Women are nice, but having a well developed physique and strong mind is just as important in a man's life. It's a shame only few men realise this

Yes but if it didn't change your physical appearance and make you look better it wouldn't have mass appeal. Think of how many people meditate compared to how many go to the gym. Both are about discipline, but one is much more popular because there's physical results. I agree that discipline is important and necessary, but it's not the reason most work out for, it's just a benefit that comes along with it for them.

Showing off and talking about working out isn’t necessarily bad just because it makes you seem immodest. It makes you seem like you’re trying too hard. That’s not a good look, it turns women off. Putting in the work is one thing, but showing off the results or talking about the gym makes it clear that you’re trying to impress. The most effective way to impress is to come across like you’re not concerned with impressing. An impressive person doesn’t need to tout it. Therefore if you tout the impressive things about yourself it makes you seem less impressive.

Obviously droning on about working out is boring. Droning on about anything is boring. And working out isn't anything more than repetition, which isn't exciting to explain. But if you've got muscles and look good for your efforts, you have every right to tell people that and not be ashamed.

Of course, i agree with that. I have the most respect for someone who is shaping his body, and the effort that goes into it. But even if you are just passionately talking about it, it will get boring, except the other person is also a workout enthusiast. General perception about it is that people who put a lot of effort into going to the gym, and talk about it a lot, are narcissistic airheads, that's not attractive. This will not help your cause, no matter how much effort it is. A simple thank you should be enough.
Same goes for having a successful career. If you start talking about how much money you make, you come off as bragging, it's not attractive.
I agree with that. Going into a 20 minute conversation about working out is boring. But just saying how many times you go to the gym or a quick story about working out helps to ease the conversation. I'm not saying you should barge in with how many deadlifts you do, but if someone mentions working out, it's natural for the conversation to be able to go that way. If it's just a "hey, you look nice", then there's no reason to bring up working out. I'm saying the stigma around talking about it in general isn't one you should care about because it's nonexistent

Personally I respond to all compliments with a simple "Thank you." If she looks fit herself I would follow up by asking her if she also works out to toss the ball back into her court.

If you're worried about showing off just smile and say thank you, then continue with your normal means of admission if you're interested in the girl. If not then same thing.
She'll still be attracted to you nonetheless, if you don't make a big deal out of it or not, she's already complimenting you.

"You look like you work out a lot" = "God damn I would worship that body tonight."
Anytime a woman says that, get her number and escalate. And don't dwell on her compliment, or on the mundane aspects of exercise.
Keep it light, fun, flirty.
I've had women say the same thing to me. I simply respond with, "I do put in a little time at gym. What are you up to later tonight?".
That's it.
When a woman is in a visual mode with you....LOL. It's as effortless as it gets.
