My SO likes my pasta. The ingredients are simple and healthy, there isn't finesse required and cleanup is minimized because it's mainly a one-pot dish. The sauce recipe is below, the pasta noodles can be cooked normally. It makes 4-6 portions, apologies if it's not very specific:

Carrots, celery and onions in equal proportions (I usually use one head of celery and one large onion)
4-5 cloves of garlic, or crushed garlic.
1 tin of tomato paste (not tomato sauce), 6 oz, you can use more
1 tin of diced or crushed tomatoes, or ~3 large tomatoes, you can err on the side of having more tomatoes
0.5 lb ground/minced beef. Don't add too much beef as it will dominate the sauce otherwise. If you guys are vegetarian, the pasta will still be tasty without it.
Olive oil, salt, pepper, italian herbs mix (if you don't have it, basil will suffice)
Optional: button mushrooms/crimini mushrooms and butter

Chop the carrots, onions, celery, garlic (and tomatoes and mushrooms if needed) into small pieces.
Heat up the olive oil in a large pot on high. If you are worried about heating up olive oil, you can substitute it with a better cooking oil (olive oil is used for the flavour).
Throw the carrots in first as they take a long time to cook.
When the carrots are somewhat golden, add the onions and garlic.
When the onions turn transparent, add the celery.
After about 5 minutes, if you are adding mushrooms, add the butter and mushrooms.
Add the tomato paste and tomatoes.
Add water so that the sauce can simmer and won't burn, but not so much because you don't want to turn it into a soup.
Add the beef and stir the sauce to break the beef up.
Add the herbs, a lot of it. Taste it to see if you should add more.
Let the sauce simmer on low heat for about an hour to an hour and a half (you can shorten it to half an hour if you are short on time).
Add the salt and pepper according to taste.

I told my SO that this basic template will make me love any meal she cooks:
A meaty main dish, garnished with leafy greens, with a side of either chopped fruit or nuts. Bonus points if she sets up the table to look nice.

Edit: all three of these make great lunches too. For the first two I keep the pasta cooked but separate until I'm ready to pack it in the morning. The third one I just pack the quesadilla filing over rice with grated cheese on top.

Pick an ingredient. This decision is completely random and whimsical. Maybe you like the shine on that eggplant. Maybe you've never butchered your own chicken and you found a whole one. Maybe you're craving some red meat and that New York Strip is on sale.

Type it in to epicurious. Find a good looking recipe.

If nothing catches your eye on there, I just google ways to cook that particular thing and check what's in my fridge/pantry to go with it.

So warning with this recipe. I don't love it. It's terrible for you. I made it once every month or three anyways though, because my ex loved it. It's a knock off of Outback's Alice Springs Chicken, and if I cooked it at home, I didn't have to go to Outback. Win/win.

Ingredients * 4 boneless, skinless chicken breasts, 1/2" thick * 6 pieces of bacon, sliced in half * 1-2 cups sliced mushrooms (depending on preference) * Colby Jack cheese * Season All * Honey mustard (recipe to follow)

Preheat oven to 350. Rub chicken down with Season All and set aside for an hour. Fry bacon in pan, drain most of the grease (see note). Sauté mushrooms with remaining oil (add more if necessary) and set aside. Saute chicken. In an oven-safe dish, place chicken and cover with a thin layer of honey mustard. Top with mushrooms, then bacon, then smother in Colby Jack. Place in oven until the cheese melts. Serve with loaded baked potatoes (crumbled bacon, Colby Jack cheese, sour cream, chopped green onion) or steamed broccoli depending on how you feel about your arteries.

Honey Mustard Recipe

(It took me several tries to get it to taste like Outback's, which is apparently what all honey mustard should be striving towards. I hate to give it to Outback, but this makes a really good honey mustard.)

1/2 cup mayo (full fat)
1/4 cup honey
2 tbsp dijon mustard

(I usually reserve my bacon grease and leave it in a container in the fridge. I use it to fry up pancakes or eggs when I want them to be delicious and use it to cook beans. Also useful in Southern or Cajun cooking.)

Additional note! Apparently Outback also makes quesadillas like this that I'd make the next day with leftovers. Fill the quesadilla with the seasoned chicken, crumbled bacon, cooked sliced mushrooms, lots of cheese, and serve with honey mustard for dipping.

I don't know if it's available where you live but I just started doing Blue Apron and it's been great. I know there are a few services like this (I think Plated is one), and I would recommend looking into whether or not your area has something like this.

In case you meant "fresh" ideas literally (and to balance out the fat content of the recipe I just shared), these are my favorite salad recipes:

Parmesan chicken with Caesar roasted romaine: this is amazing. I usually serve it chopped in a bowl because who wants to put that much effort into eating a salad? Not me. But it's way prettier/more presentable served as cooked. I usually rub the romaine down with the remaining bread crumb/parmesan mixture.
Honey chipotle chicken bowls with lime quinoa: so, so, so, so, so good. Current SO is on the fence about avocado and doesn't care for tomatoes so I don't make it much anymore but it's so good oh my god. I used to sub couscous for the quinoa because ex hated quinoa and instead of making a proper dressing for the greens, I'd just salt/pepper/olive oil/lime because honestly, the flavor from the chicken overtook any dressing anyways (and I'm lazy).
Curry chicken salad. Looks like this from the restaurant I used to get it before they stopped making it/I moved away. I made a copycat recipe ages ago that I'll stick in a comment.

My most requested dinner is my Barbecue Chicken Baker, it's a variation of a twice-baked potato. In the spirit of being honest, You should know that I mostly wing it whenever I make these, so ingredient amounts are going to be rough estimates; feel free to adjust to your taste. The baking times are exact. This is enough for two people.

This is what you need:

Two chicken breasts

Whatever you like to sauté chicken in

Barbecue seasoning (I like BBQ 3001, it's from Penzeys)

1/2 c barbecue sauce (I like to use the spicy version from Weber)

1 T brown sugar

1/4 c water

the biggest Russet potato you can find

1/2 c milk

2 T butter

1/4 c bacon bits (I use Oscar Meyer Real Bacon Bits, but if you're the type of person that likes to cook and chop her own bacon, that's cool, go on with your bad self <3)

1/4 c sour cream

1/4 c grated extra sharp cheddar cheese

This is what you do:

Set oven to 350. Wash and dry the potato, then pierce in a few places with a fork. Set directly on oven rack and bake for an hour and a half.
Season your chicken with barbecue seasoning generously, then cook in your pan/cast iron. Once completely cooked, add 1/2 c of barbecue sauce, 1/4 c water, and 1 T brown sugar with the chicken. Let simmer until the sauce is the thickness you want. For me, this is about thirty minutes.
Once the sauce is the consistency you want, take two forks and shred the chicken. This is easy, but also a gigantic pain, so if you have a food chopper, make your life easier and use it.
Once the potato is done, cut the potato length ways and scoop the potato out from the skin and put in a bowl. Do not discard skin. Add the milk, butter and sour cream together and mix until blended. If the potato is giving you a hard time, zap it in the microwave to soften it up.
Add the cheese, bacon bits, and about half of the barbecue pulled chicken and mix again. Sometimes I add more sauce or seasoning, sometimes I don't. Do what feels right in your heart.
Spoon the mixture in the potato skins and top with the remaining pulled chicken. Place on baking sheet and bake for thirty minutes. And now you're done.

I'm usually good with just my potato for dinner, but my boyfriend enjoys a side salad with it.

We pick out dinners from the newest weight watchers cookbooks! We find dinners that serve 4, I eat one serving and he eats 2, and then I have a lunch for the next day. I def recommend weight watchers "what to eat now" and "50th anniversary cookbook"
