I wouldn't use the answers here. It depends entirely on context, if its before or after you've had sex with her.

If before, then its a stupid question for her to ask. You may be coming off as too much of a "player" and she's worried about being played; this is bad, try to stop coming off as a player. To address this, you need to understand what her concerns are. That she thinks you'll just make her another notch in your belt. "I'm just here to have a good time, if you're looking for a quick thing then I would suggest any of the other guys here." Pull arm away and look around the room. Slide arm around her shoulders "I like talking with you, you're adorable. I'm slow and only do things with women I trust." It depends on context, but addressing her concerns and escalating helps a lot.

If you're already had sex with her.

I've been in this situation several times, and its not something that is great to deal with. Women never forget the number you tell them and they judge you extremely for it, especially if its much higher than theirs.

This is a girl that you've had sex with and she's not looking for "cocky funny" anymore, she's looking for a real connection. From my experience, I wouldn't give a number, and I definitely wouldn't say that you don't remember it cause that infers that it is a huge number. Best is to explain to them that you remember every girl that you've been with and that they're all special to you in some way. You haven't asked her about her past and that you would like yours to stay in the past because that's where it is. You've been tested and don't have any diseases, no kids, and none of those girls are anything in your current life. Its her that matters and not them.

My response is usually something nonchalant like "thousands", or "I've slept with lots, but only had sex with the lucky ones" because I'm simply not keeping track, and it doesn't matter. It's not a question I would ask of her.

i prefer to answer these shit tests by showing humility, aggressiveness, and setting boundaries. "well i'm flattered, and i'm sure you'd love to know all about the details of my love life, but that's privileged information."

I honestly love getting this question. If ever you get questioned for being a player or a womanizer, which is a stupid question in my opinion, I'll usually answer with something stupid:

"No. You're the first girl I've ever talked to."

"I'm usually very shy but you but you have a way of making feel comfortable."

I'd often get a few teases and a, "yeah you're a player." (I actually hate that term and I do not want to be associated with it for many reasons. Playing women seems so manipulative and devious. I am simply a regular guy who enjoys the company of women.) To which I'd respond with something like,

"Does it really matter?"

You'd be surprised at how many women will say "No."

When I get asked the question, how many women have you slept with, I tell them:

"You're my first." and various other bullshit answers. If they start pushing me and getting annoyed I'll tell them:

"A lady would never ask and a gentleman would never answer." or "I don't kiss and tell."

If they continue to give you shit any further tell them, "I gotta go." or "You gotta go."

Your business is none of their business, and don't let anyone make you feel like shit for having fun. Remember that.

There are loads of options for this. Basically just avoid giving a straight answer. Your responses should show that you don't take the question seriously.
