If it's your idea, then you need to take a second and get honest with the situation at hand.
Chances are as soon as you sleep with someone else, your relationship with your bf is over. Just saying you want an open relationship probably already lit the fuse to the dynamite that will end it.
If you're serious about maintaining a relationship with your current bf, help him get laid first. Or at least wait until he makes it happen for himself.
But, if you're like the 99.9% of every other 21 year old girl who proposed having an open-relationship to her bf when you already have a dick you're ready to jump on - then you're just looking for a reason not to look/feel like the person who ended a relationship just because you want to get new dick. Or, you should accept that you want this new dick, and you're afraid that if you get rejected you would have lost your relationship with your bf had you severed the relationship before pursuing another man. Which is to say, your open-relationship strategy is rooted in fear, and is inconsiderate of your bf.
So, when it comes to sleeping with a co-worker, there's countless advice about not doing it. But you're young and horny so, if you need to learn that mistake on your own, now's a good time.
If you want to be a bit honest about the whole situation, you should just cut ties with your bf. Pursue this guy at work and say your single and want to get together.
But, I'd be surprised you do this.
Statistically, here's what's going to happen...
You're going to flirt or relay to your co-worker that you're in an open relationship and want to sleep with him. You two will hook up. You'll feel a little bad about it when you try to meet back up with your bf, who you'll start to resent because he doesn't/can't make you feel like it feels like to be with this new guy.
Your bf well resent that you already slept with someone and feel emasculated. Your relationship will end.
You'll rationalize that it's the bfs fault because he agreed to the open-relationship and he didn't go the extra mile of making you feel like this new guy did.
Meanwhile, all of the reasons why it's bad to hook up with a co-worker will start to happen. Your new guy will not be interested in a long term relationship with you because - I mean - do I really have to explain why? Your reputation will sour at work, you'll resent your co-workers who think less of you - and then you'll start thinking the whole system is against you. You might even pick up a feminist handbook and start labeling it patriarchy.
Either way, in the end, statistically speaking, this doesn't end well for you.
Your better off re-evaluating your relationship with you bf to see if there's a way to salvage it so that you wouldn't be interested in destroying it for a hook up. Or, you need to accept that the relationship is unsalvageable, end it, and then pursue other partners.
Either way, co-worker sex has drawbacks.

Yeah, I hate to say it but often what happens in open relationships is one person eventually gets jealous and it falls apart. Someone will get laid more often or someone runs into someone that the other partner feels gets along too well and it implodes.

yeah they think they can handle an open relationship but it will quickly ruin their relationship, one may even catch feelings for someone else, there'll be jealousy if one partner likes sex more with the other person rather than their SO. if they decide to close their relationship after trusting may be harder. very few ppl are actually cut out for this because we humans are mostly monogamous(it's ingrained into dudes head coz they have to ensure paternity).

As someone who has been in the OP’s crush’s position a few times I say don’t do it. I’ve changed jobs a couple of times from how messy these situations can be. First, if the open relationship was your idea then I would make absolutely sure that your boyfriend is down for this. Too many times a guy will say yes just because he doesn’t want to lose you and then dump you because he really isn’t and can’t get passed you sleeping with someone else. Not to mention he may show up to the workplace and start problems with the guy. Secondly, personal and professional lives should be separate. I am very much aware, dude. I'm talking about OP's specific situation (from the tiny bit I can see). They are very young, haven't slept with anyone but each other, and have no experience with this lifestyle, let alone simply dating around as an adult. Are they both genuinely interested in the idea of open relationships? Truly ready to handle the emotions and situations that come with it? Or do they just want to sleep with other people for a change? Anxious about going through life only sleeping with one person? Especially in college, surrounded by young attractive people.
If they broke up, dated around for a while, then got into new long-term relationships with new people, would they still want that open relationship? Do they actually want this lifestyle?
Couples can get into it for the wrong reasons is all I'm saying. Ideally it's done to further expand and explore their love life together, no? This sounds more like them wanting to expand/explore their individual love lives while they're young. And there's nothing wrong with wanting that. I think it's natural. But it can be problematic for the relationship they want to preserve. What happens if Person A starts getting consistent action and Person B doesn't? When it's about fulfilling their personal needs and not their needs as a couple, you potentially get jealousy and resentment.
I saw a small handful of friends' relationships, during college or shortly after, fall apart more or less exactly like this. Dated only each other since like high school, wanted to sleep with other people so they opened their relationship, jealousy and resentment. None of them were really swingers, they just wanted to be single but didn't want to breakup.

Poly/enm here. I think there are a couple ways to approach this. First is the direct approach that someone else commented. Ask him out for a drink and then bring it up in conversation there. This is the riskier approach and requires you to put yourself out there more.
The other way to do it is to just bring up the open relationship in a casual way. You are his friend and coworker so I imagine you talk about personal things, just let it come up. Once it does, he then has the option of asking you out for a drink.
I also want to say, please ignore all these comments telling you that you are making a mistake opening your relationship. Yes, sometimes when people in LTRs open up they do end up breaking up for a bunch of different reasons. However, there are tons of stories out there where people open up, stay together, and grow closer because of it. You just need honesty, communication, and a willingness to put in the work!
