Sounds to me you were being wishy-washy in setting up the next date and that was turning her off. The advice I am giving you is what you should have done in the first place. At this point it is anyone's guess.
I am a woman, however I am much older than your target audience and all women are different anyway, so my advice may not be applicable to your situation. However, I will say that I, and most women I know prefer a man who leads and is decisive. Spending days setting up a date over text is neither. I can't even imagine what that is about!
Since you have likely already turned her off with your softness, I feel like more of the same (let me know when you're free) would just be the kiss of death. I say step it up and offer her a firm plan that she can respond to.

When you are getting advice from a group of people, you are bound to get conflicting advice. It's up to you to decide what you are comfortable with. Yes, this is common to overthink when you are fixated about a girl. Don't get fixated. This will lead you nowhere, and it is extremely unattractive for women.

We gotta try our best at dating, but remain humans at the same time, and we can't predict and guess everything. The phrase "let me know when you are free" is not the worst, but it is pretty bad. So. I'm not a master of texting but I would do this: When a woman starts flaking around Tuesday/Wednesday I tell her: "ok, then I'm gonna ask you later in the week". Then I go silent and text her at Friday afternoon: "hey, how about going out this weekend?" If she refuses and doesn't set any date, I start thinking she got somebody else. So I tell her: "you know, I don't like this chatting from time to time over the week, I like to meet people in person and spend great time together, so I would like that within a week you tell me when you're free". Ofc in a respectful, human way. If she really likes me, she will manage to organise an evening within a week. If she flakes, then whatever.
For now on, have a cold beer, read something interesting, read about investing or your profession, talk to other women. Self-develope.

Just take it slow. If you show signs of frustration to her, it shows that you don’t have much else going on in your life and as a man your life purpose should always come first. Yeah, that's mixed signals. Several things could have triggered them which may or may not have to do with you (but chances are you'll never know or you'll never get an honest reply). She seemed very excited at first and that's good, but after the date her feelings changed. She was not that excited any more, and she felt like toning-back your expectations as well.
One question though. You said you already went out, what 1 or 2 times already. Did you do anything intimate? Did you go out as platonic friends? or as man-woman? Did you flirt? did you kiss?
What could have gone wrong? You name it:

Don't pressure anything. If you are really uncomfortable without closure, you could try to set-up a date one more time and if she dodges that/ghosts you as well, you could simply text her that you really had a fun time together, that you think she is an amazing person, and that you could see this going X direction, but you get that the feelings are not mutual and that's totally respectable, so bit her goodbye and hope that you meet her again at some point maybe under different circumstances

I once asked a girl out and I dated her. Things went very well and I told her after the date that we should do this again, she was really up for it. A few days after, I texted her to schedule the date and we got it settled up. So, I added the event in my agenda and moved on. After this, I didn't have anything to text her.
The day comes and I go to the place where we were supposed to meet. However, she basically didn't show up. I waited 30 minutes, thinking that she was probably late. I was working on something meanwhile (was not going to waste time). After these 30 minutes, I texted her. She basically had forgotten about the date. I told her "no worries" and left it here.
Why am saying this? For me, dating is not about forcing someone to hang out with you. There is a 50/50 rule that I like to abide to. There was no reason for me to be 100% into her as there was no reason for her to be 100% into me. I took the initiative to ask her out and to repropose her, all I expected from her was to remember the date and just show up.
I could have kept texting her, I could have at least messaged her something the day before, yet why should I have done any of this? I didn't feel the need to chase her.
I won't tell you "don't come off as desperate or needy", this is still neediness itself as you are still shaping yourself towards her. Instead, I'll ask you, do you feel like there is something you should be doing? She told you that she was busy, how are you feeling about this? If it's a problem, tell her or don't consider anything with her. If it's not a problem for you, then just tell her to contact you as soon as she's available. Don't be nervous.
