her entire backstory is a red flag. also what exactly do you mean with "something serious". if you mean marriage, you shouldn't marry anyone who is likely to earn less than you. it's quite obvious she just seeks financial support. you can have fun with her but if she insists on more you gotta leave ASAP.

Not adding you to social media isn't necessarily a red flag. Social media can be "monitored" and a new "boyfriend" can inflame custody and divorce issues. Fly under the radar. Especially with kids.

Having 2 kids and dad in jail (he'll get out eventually) are things you'll want to consider.

No it is not a red flag. You should stay off social. You have an opportunity to better their lives. It is up to you. If youre only after sex, then you should consider moving on. If she has young kids, they need stability. Far too many men get involved with single moms, while only having self serving motivation
