Internet/phone companies generally don't cough up records in civil cases. There needs to be a suspicion of a crime, eg. A criminal warrant.

If this is the ‘worst’ she’s throwing at you her case is about as solid as wet tissue paper.

The only conceivable way this could be bad is if she’s alleging it was kiddie stuff that was viewed in your house, which obviously is a crime.

This should serve as a reminder to everybody here to guard your privacy on the internet. A legal team in a civil matter may not be able to get a judge to order you to divulge anything, but they could hire an internet sleuth to track down information on you based on what your wife already knows then trace it using run-of-the-mill hacking techniques. Even if a judge were to order you to divulge sensitive information, keep your options open by arranging your affairs so as to maintain plausible deniability. Sounds like you are using a VPN which is a good 1st step, but in addition to the VPN, there are a bunch of other precautions one can take to remain anonymous and hide your internet activities from spies and snoops. The important thing is to think of these things well before you have the pressing need for privacy. Also my golden rule is that I guard my privacy from everybody always, including my wife. All it takes is one lapse or indiscretion to put a chink in your privacy armor.

Many divorces start where one spouse accuses the other of being an alcoholic, porn addict, and/or "emotionally" abusive. And cannot substantiate the claim whatsoever.

In Utah, you can file at-fault or no-fault. With at-fault, you need to prove the reason you are asking for a divorce to get a favorable split in assets. Family court is not a criminal court and your wife is not the police. The court won't issue a subpoena to the internet company, likely your wife's lawyer may write a letter requesting information. The internet company is under no obligation to provide anything and even if they do, you can simply say its fake.

If she really wants to try an at-fault divorce, my suggestion is to let her waste her money on it. She is unlikely to be successful and will wind up with 50-50 split

Another thing to remember is that even the 50-50 split depends upon your voluntary disclosure of your assets. If you have large $$ amounts in easy to move financial accounts, do not disclose and contest every asset she claims you have. If the house is your largest asset (most cases), its usually not worth fighting for a greater than 50% split

You can't just subpoena anything.

The first thing they would try to do is issue a formal discovery request which you could deny on grounds of harassment

The second thing they could do is go to a judge who would deny their request for a subpoena.

I'd venture to say that no court would issue that subpoena. That would be absurd. You're allowed to look at legal porn all you want. You're allowed to have bizarre hobbies or religious views if you want. The court doesn't give a shit about your personal life unless it truly affects the children somehow. Unless you're showing it to them or masturbating while they're alone in a swimming pool or some shit, I don't think there is an issue.
