TLDR It's because men are 99% of the time the initiators and pursuers in romantic relationships, so depicting these relationships as exciting encounters simply wouldn't be true to the male experience. Men like watching shows with goals and the whole "young woman in the big city" type of shows rarely have goals.

"Sex and the City* is a huge subgenre for women, specifically young women, in the West. The show typically has a group of young women moving to the big city (nearly always NYC), taking a trendy job doing something trendy, and falling in love and sleeping with a variety of men, all while keeping her eye on one particular guy. See Sex and the City, The Bold Type, Girls, Sweetbitter, Emily in Paris, Younger, etc. What's weird is how there's never a male version of this where a young guy moves to the big city to live and love. I think this is due to two main reasons:

1) These show have no goal. Now, I haven't watched much of any of these shows but it seems that most of the plot of any individual episode is about relationship/sex drama ("omg I ran into my current fling's ex-girlfriend", "omg my current fling doesn't eat me out right"), or the protagonist committing some social faux pas that they then scramble to fix by the end of the episodes. But there's no overarching plot beyond the continuation of life, there's no goal like becoming the best chef/fashionista/writer that can be used to guide the show and give an objective metric of whether our protagonist is on the right path. Men tend to like shows and movies that have a plot and a goal to accomplish, even if it's something as dull as beat up the bad guy.

2) A huge part of these shows is the protagonist getting unexpectedly hit on by some cute stranger at a cool event and it's up to her as to whether she accepts or rejects him. And for most women, that's true to her experiences. For men, the entire dynamic flips so that it's him putting himself out there for acceptance or rejection. It never feels good to give power over to someone else, and being rejected even from some random girl can sting. The only way to avoid that from a show's point of view would be to have girls accepting his advances, which only happens to a very small minority of men.

I think it'd be interesting to see a Sex and the City style show for men, though I don't know what it would look like or how it would be received, to see a group of young men treating women as disposable and sleeping with one after another.
