It seems like the men in my life eat a lot of meat. When I cook for myself, it's often vegetarian, but the SO doesn't seem to feel like I'm feeding him unless an animal died lol. I'd like to start introducing meatless Mondays, but I'm scratching my head coming up with recipes that he'll like. Meatless entrees I've made before (quinoa and black bean chili, eggplant parmesan, ratatouille, pumpkin ravioli) have gotten mixed reviews, some better than others. Meals I make for myself tend to be too light for him to be satisfied. And he's not a huge fan of egg outside of breakfast or of tofu period. He's fully in the meat and potatoes camp, and I know a lot of your men are the same. I want to clarify that I'm not trying to change him or anything--I just want to cut meat one dinner a week and would like to introduce him to the idea by making him an absolutely bomb meatless dinner tonight.

What do you ladies cook when you're trying to avoid meat but still want to keep your men happy, satisfied, and very well fed?

To start this thread off with an untested recipe, this is the one I've got my eye on. I also have an acorn squash I'm thinking about stuffing--he loved it last time, but last time had ground meat in it!

Edit: Just to add, because I don't think I did a great job explaining this above, I'm not making the meatless Monday decision for him. I've made him meatless food before that he's enjoyed. I was going to bring up the idea of it tonight after work, and I thought a fun, meatless dinner would be a cool way to do so. And if he hates the idea, then I have no issue dropping the subject. I don't make arbitrary decisions that affect both of us ever, and this is no exception.

Update: Last night I made a mainly vegetarian dish, put some chicken on his, and we discussed. He seems game, so we're going to go through with it. Thank you to all who commented--this certainly blew up more than I thought it would and turned more into a relationship post than a recipe post, which was not my intention. Tonight we're having grilled cheese and tomato soup, not to cut meat, but because it's delicious.
