My 25yo friend is currently seeing a 36yo man who treats her well (and he better!) as he has a lot to gain - she is younger, prettier, has a career, etc. They are both very Christian and I guess he has been looking for a good, virgin Christian girl, but for some reason, it creeps me out.

I don't like age gaps because it further perpetuates the myth that older men are better and leads to self delusion in males who think they are less affected by ageing more than women. This is not true and in fact the opposite. Lots of research shows men benefit from younger wives, whereas the women don't. In fact, older husbands age women faster. Older men are not necessarily financially better off either (he still lives at home with his parents and younger siblings).

I think if women said no to large age gaps, men would maybe start to panic about settling down a bit earlier. And would stop seeing their ageing as a positive thing.
