I hate how he's framing it.

"You must be curious about dating older men" = curiosity is a positive trait, you don't want to be uncurious, so that is framed to encourage the woman to identify with the curiosity and present dating an offer man as something cool and desirable

"We can be more demanding" = creating faux exclusivity, not all women can manage to get through the door of dating an older man since we are demanding, do you have what it takes to succeed, if you like a challenge this should be interesting, liking a challenge is a positive quality, even though in reality the older man will take any younger woman

I personally see straight through that language and hate it, but maybe some other women fall for it. I know I fall for other types of language. I personally fall for the pitiful language ("no one wants me, I'm never going to find anyone") and so the boastful language ("I'm such an exclusive guy, I don't date just anyone") doesn't work on me.

But it's good to be aware they use all angles.
