For those of you who have your kids a limited amount of time what are you eating when you don’t have them (assuming you’re by yourself during that time)? I don’t generally make “meals” for myself when my kids aren’t here-I just snack most of the day. Breakfast is pretty consistent whether they are here or not: 2 eggs sunny side up topped with spicy guacamole (I buy the individual 100 calorie packs), a vanilla Greek yogurt and 2 tbsps of peanut butter. When I get home from work I generally snack on the same stuff I snack on during the day at work: unsalted peanuts, jerky, tuna (with guacamole) cheddar cheese sticks, apples, grapes, white cheddar popcorn.

Sometimes I’ll make myself a couple of burger patties or chicken breasts on the grill and top them with salsa/guacamole for flavor, but I don’t get more elaborate than that. I pretty much only drink coffee, water, and unsweetened iced tea-I had a coffee pot with a bean grinder but now I just use a Keurig. I do most of my shopping at Aldi so between keeping what I eat pretty simple and the fact that I mostly shop there it keeps the grocery bill pretty reasonable.
