What do I think? Unnecessarily high maintenance and not interested in you beyond what she can get out of you. Personally I wouldn’t recommend it. Main reason being is their priority will always be their child over you, which is normal and you have to consider. Also at the same time you end up taking on more responsibility than just being her “boyfriend”, you also end up becoming a father figure to a child that’s not even yours. It can be very damaging to a child if you break up years down the road too.
Can you find happiness with a woman who’s a single mother? Sure. Is it a fuck ton more amount of work? Absolutely

Add to this that although you are expected to act as a father figure, you are also not permitted to act as a father figure. All of the responsibility, none of the authority. She can and will over-rule you, and the kid may be permitted to do the same depending on the woman. Plus you can often expect resentment from the child since they may want their parents to get back together and think of you as the problem.

I wouldn’t say it’s a black and white kinda matter. There’s moms out there who make awesome people to date and perhaps become partners even. Of course the kid(s) is (/are) a factor that changes a thing or two, but that’s not all bad, either. Personally, I’d be cautious to exclude single moms from your dating pool right upfront, but of course in the end that’s up to you.

She mistreated you throughout the entire date because you didn't open the car door for her? Yikes. She didn't even give you a chance. As viewers of your post, the majority of us, including myself, agree that she was the issue here but let's take a look at what you could've done better. Before I get into it, I hope you're dodging that bullet that was that woman. She might've dodged a bullet too. I wasn't there so I don't know the whole story.
I highly advise against dating people from your workplace. This is one of those "Don't sh-- where you eat" instances. With how things went with her on that day, can you say for sure that you two will have a professional working relationship? I doubt it. I highly advise against dating women with children too. Trust me. You don't want to deal with that. Her children will always be her priority. If you two were to get married or move in (which clearly you two won't), you won't have a say in much. Heck, you can't even punish her children both verbally and physically. It would be safe to say that the household is already toxic with how her and her daughter were talking on the phone. Heck, she allegedly had an abusive husband too. She needs to seek come counseling.
Movie theatre dates set you up for failure from the get-go. It leaves little to no room for eye contact, conversation, and physical escalation. Those are very important when it comes to dating. You were better off taking her for a glass or two of wine. In a way, you should be content with how this played out because she showed you enough that should put you off from going on another date. Her communication skills are poor, she's toxic, and she's cheap. She expected you to pay for 2 cups, popcorn, other snacks at concessions, and food from sonic? She expected you to pay for food from Sonic after behaving like that towards you? Lol. Collectively, that sounds like a Benjamin. She was using you for your money from the get-go. She didn't even give you a chance.

From a woman, it sounds like there wasn’t good communication from either party. You weren’t aware enough of what she was feeling and when you did feel off, you didn’t ask what was going on. It’s important in healthy relationships to just cut the BS, don’t walk around issues. Confront them directly so that you can resolve them. Instead, you ignored it and just let her simmer, which definitely built up over the two hour movie period until she felt ready to blow up.
As for the woman, as others have said she sounds really high maintenance and either crazy or just really disillusioned from previous experiences. And obviously if she felt that way, she should have been less passive aggressive about it, but also it’s awkward for her to say what she’s feeling in this case unless directly asked. So I’m glad you asked, and I’m glad she responded honestly and openly.
Sorry this happened to you. Sucks even more since you’re coworkers.
Oh and as others said, don’t think you should continue seeing her. Since you work together, you should find a professional and mature way to break things off easy. Talk it out, don’t just ghost each other, since you’ll have to see each other work and maintain a professional relationship there.
Yup, she's looking for a provider and a "Dad" for her daughter probably, that's why you should never date mommys, and if her husband was "abusive" he most likely started off as "alpha" "cool" or "exciting" and then he "turned out to be a totally different person" when she comes to her senses and starts thinking. Was this a first date? If so, never take a girl out to a movie for a first date. No opportunity to flirt and build rapport. Escalate physically? Sure but it’s going to be awkward.
The attitude alone from her would’ve made me leave. Also, if she is upset because she expected you to open the car door for her on a possible first date, you need to run away.
