It's totally a thing, and happens for 2 reasons I think:

As a power-play. The woman wants to hurt her husband/bf for some reason (unconsciously), and knows discussing past lovers will do it.
They have a weird sense of guilt/shame about past sexual behavior, and they are using their current bf/husband as a therapist.

Insecure girls have told me stuff about their exs as a power-move before. Either casually dropping that he had a big dick, that he was selected as the city's most eligible bachelor, describing kinky sexual stuff they've done, etc.

Unlike the average guy though I really don't care, so never worked the way they wanted.

They don't have to tell the men they're in a relationship with for the man to find out. Sometimes the man finds out from the men she was with, or her girlfriends, or men who are somehow associated with her/her friends/her girlfriends.

I've seen it happen. Sometimes they brag about their conquests when drunk. Or talk about it regretfully. But it does come out.

It happens when BFs and husbands ask the questions and the women involved decide to answer. (Whether the answers are truthful and complete or not is another matter entirely.) Answers that, candidly, those men are entitled to. If a guy is going to invest in and commit to a particular woman, he's entitled to know what he's getting in return for all that money and time he's going to be spending.

There's a difference between a woman revealing her N and "telling men all of the things they've done sexually with other men", also. I think most men want and ask for the former. Most men, I suspect, don't care all that much about the latter. Though I have had women tell stories about the latter quite often - experiences, cock size, good/bad/meh sex, locations, etc. It was usually volunteered too -- I didn't ask for that info.
