"I swiped wrong" is her being a shit. She's immediately testing his self-value by essentially shutting down his opening statement with a reply designed to test his confidence. She's implying that she does have great taste in men, but that she swiped wrong on you.
A self conscious guy (low self-value) will typically reply with "have a good day" or something like that. That shows her your opening statement was false confidence - a line fed to him from a more successful source - and that you aren't worth her time.
A self-centered guy (extreme self-value) will take it to heart and try to convince her of his value right away. "Oh please, you swiped right for a reason", "is that what you think?", etc. Shows he's more concerned with making sure everyone knows how valuable he (thinks he) is and likely has a fragile foundation for all that confidence. Hard pass.
This reply rolls with the jab she countered with. His opening shows he's confident, but his ability to immediately self-depricate shows his confidence will stand up to an attack on it. You've now implied your confidence in your self-value (you swiped for me so obviously you have good taste in men), balanced it by leaning into the implied insult (oh no, my statement stands - you have impeccable taste, but I'm garbage), and shown you aren't going to abandon your plan once you get punched in the face, to paraphrase.
If she was testing him, this is the kind of mindset to reply in. If she was serious, he's now potentially gotten a chuckle and a reconsideration out of a previously lost cause.

Moving forward with a plan that you know will fail is very misguided. Please, if she doesn't show interest, then stop bothering her. Being polite does help with situations like this as she might have only judged you by something small and insignificant. If she had, being anything other than polite, would ruin your chances of any level of success. Otherwise you are simply wasting your time and energy for no reward of any significance. You wont get any of that back and maybe, having a negative outlook on life, is the reason the rest of the day was slightly dimmer than it could have been. I can't think of any other reason to keep talking to a girl when she says something like this other than to part ways and wish her a good rest of her day. Takes nothing. Gives nothing. And you walk away from the situation with, at least, the same thing you walked in with.
