If you're going by statistics, 5"8 in a western country is below average, which when you're younger (ie looks are mostly what matters), as well as height being one of the most important factors to determine a mans attractiveness, it can be a turn off for a lot of chicks, which is fine, it's simply how attraction works

Depends on the country. I believe the average height for men in the UK off a short google is 5’9”. In the US it’s about the same and a standard deviation is 3 inches (75% of the population is between 5’6” and 6’).
I think unfortunately tall (to a point) and attractive are often linked in collective ideals so people think “short for an attractive person” more than short. At the end of the day of course..... it doesn’t matter you make do with what you have.

I think for the most part god is fair except for some exceptions obviously. I’m 6’3 in sneakers, but god dam I am fucking ugly lol. I have a buddy who is 5’2 and is one of the most handsome guys I’ve ever seen in real life (no homo). This dudes also got a great physique, not to diminish the work he put in, but hes obviously blessed with genetics in that aspect. It’s weird because we only try to mask certain things, I try to mask my whole head by wearing hats, however I never have to try and hide my height. My buddy is the opposite, always worried about the height, but never his actual looks.

That’s considered short and for the life of me I’ve never really understood why women are so critical about it. I get the evolutionary reasoning, I really do, but in this day and age I’m wondering why women have held onto it so tightly. Some people are just attracted to different things. Some people are attracted to people that are not compatible with each other. Some people are attracted to people but won't date them due to circumstances or red flags. There can be any number of reasons why someone won't consider you as a romantic partner and a person's feelings are valid. So if women don't want to date someone because of their height, well I can't consider that shallow at all. It's their choice (and their loss haha).
You'll be fine matey. Your height may be a benefit but it isnt your defining feature, so don't hang up over it. People like you for who you are and women want to be with you. Not any tall bloke, just you.

I’ve dated quite a few taller women. I think most of them prefer taller guys, all things being equal, but it’s not a dealbreaker.
What IS a dealbreaker for them is a guy who is insecure about his height. She needs to know you’re not going to be an asshole about her wearing heels, or start fights with people about comments, etc.
I would have skipped the self-deprecating comment about heels until she brought it up, but it’s a decent line. Here are some of my go-tos for taller women who say bring it up, depending on context.
“I love taller women. It’s always been a fun treat when I’ve dated them”
“I know, right? It’s a good thing I’m so fucking charming.”

Except that for most girls a guy been shorter than them is almost always a turn off. The only way a short guy can counter that is been indisputable confident despite of it. Being bulky also helps. You're definitely right in some contexts (likely late 20s onwards) but when you're barely past your teens, looks are pretty much all people care about (both guys and girls). I have no idea what my date's plans for the future are, whether she wants kids etc, and she doesn't know my answers to those questions either. All I know is she seems fun, shes attractive, and that I wouldn't mind seeing her again. Of course there are some people looking to find a LTR in their early 20s, but they're the minority.

I get where you're coming from but it really doesn't work. As a guy, your height, something you can't change, is considered extremely important. It's almost a given that the guy 'should' be taller, so to be presented with a situation where you know the literal minimum expectations arent met, but not giving a fuck, is completely different than a girl being fat and managing to get laid. to keep it short, I gym a lot, 5-6 days a week, maintaining a healthy body fat, ~14%. Unless its summer time and you're taking your shirt off, a slightly higher body fat is better than being diced since you'll look bigger. Nutrition-wise you dont have to go crazy, Just avoid anything junk, get your macros in and ensure you're at a slight caloric surplus.
