A lot of the women, from my understanding, will try to hold off on giving up sex for as long as possible until they feel they would be losing their source of money, so in some ways it mimics a relationship but it's essentially betabuxxing that both parties agree on.

Men's "issue" with "sex workers" isn't about the women as they are still engaging in a sexual act, the same as other women who you sleep with where no money has changed hands. For myself and every woman I've ever met in my life, the idea of an old guy offering us money/gifts in a sexual context is vomit-inducing. I have never met a woman that would even be neutral about that idea, but would rather run as far and as fast as possible.
